There are many recipes that are staples in the south. There are corn bread, black-eyed peas and craw fish to name a few. These foods have become known for being part of the Southern lifestyle. And they are best known for being an integral part of Southern culture.

Of all the foods in the south, though, it seems like collard greens have become the most famous and iconic of all of them. There are so many recipes for this humble green, there is the basic collard greens recipe, buttered collard greens and sauteed collard greens.

Collard greens don’t really look particular appealing or appetizing. They’re not spectacular in the very least. However, they have a distinct taste and they’re especially healthy.

Bok choy with Soy Sauce

You can always serve a fast, simple and delicious vegan recipe. Here is a way to have one.

Heat 2 teaspoon of oil in a large frying pan or wok. Add400 grams of sliced bok choy and stir fry over a high heat for 1-2 minutes. Combine 1 teaspoon of garlic powder, 1 teaspoon of grated fresh root ginger, 2 tablespoons of soy sauce before adding to the pan and stir fry for another 30 seconds. Serve immediately.

Linguine Tossed with Eggplant

In a large pot, cook half a kilo of linguine according to package directions. Put linguine in a large bowl and toss with 2 tablespoons extra-virgin olive oil; set aside.

In the pot, heat the remaining 1/2 a cup of extra-virgin olive oil over medium-high heat. Sauté 2 small eggplants (cut into ½ inch cubes) for 10 to 12 minutes, until lightly browned. Add ¾ teaspoon of garlic powder, ½ a teaspoon of dried oregano, ¾ teaspoon of salt and ½ a teaspoon of pepper. Sauté for about 5 more minutes before adding 4 chopped ripe plum tomatoes, 2 tablespoons of chopped parsley, and cooked linguine and then toss gently until heated through.
